So today i can see 5 inches of snow where i am in Virginia:) I would be working on my new purses i am creating but funny thing is that i got everything I needed for my family and myself to enjoy a relaxing day at home on a snowy day BUT my batting for the purses lol. So i figured since i cant share pictures and instructions for creating your own bag today i will do what i have said i was going to do and share another aspect of my life:)
My children are odd and love their fruits and veggies they will eat them before they eat anything else! I have an awesome recipe for veggie lasagna!
Vegetable Lasagna
1 box of oven ready lasagna noodles
8oz container of ricotta cheese
4 oz of freshly grated asiago and parmesean cheese
16 oz bag of taco blend (any mix blend will work make sure it has mozzarella) cheese
1 can or jar of spaghetti sauce (to your liking i use basil and garlic or chunky mushroom (extra protein for my kiddies))
1 head of fresh broccoli
2 carrots
1 egg
Begin with chopping the broccoli and carrots into small pieces. Put them in a small sauce pot and let them simmer a few minutes until soft. Grab a big bowl and mix in the ricotta cheese, the grated asiago and parmesean cheese and egg and set to the side. Grab your favorite dish to put lasagna in and begin with putting a small amount of sauce on the bottom then put your first layer of pasta (do not boil these noodles are a wonderful thing!). Now once your broccoli and carrot are soft and cool add them to your cheese mixture (you can also just sprinkle them on top of each cheese mixture layer if they are not cool enough. Once your ready to begin rolling with all your ingredients put the cheese and veggie mixture on top of the noodles (i normally use my cake spatula and then lay down my noodles because it is thick. After you add that sprinkle some of your shredded cheese and then your sauce. Repeat until your either out of ingredients or out of pan :) Bake at 350 for about 1 hour and then let cool for about 15 minutes then YUM!
Enjoy i hope you and your family love it like we do!
